Lemon Biscuity Goodness

Yesternight I bestowed it upon myself to bake 'Lemon Biscuits' a la Lulu Grimes, which was sourced from that online gastronomic behemoth - The Good Food Website.
I am more inclined to make wet dough biscuits as I find rolling and re-rolling biscuit dough especially tedious but after weeks of flirting with the idea of making the lemon biscuits, I took ze plunge!





Ingredients:
325g plain flour                                                               1 lemon , zested and juiced 200g salted butter , chilled and chopped                    125g golden caster sugar 2 egg yolks                                                                       200g icing sugar



Method:
1. Preheat the oven to 180 degrees centigrade and butter a baking sheet.
2. Whizz the flour and butter to breadcrumbs, add the sugar, lemon zest and egg yolk and process to a dough. Roll the dough to 5mm thick and cut out biscuits. Put on the buttered baking sheet and cook for 15-20 minutes. Cool.

3. Sift the icing sugar into a bowl and mix with enough of the lemon juice to make a runny icing. Drizzle the lemon icing over the biscuits.
